How do you handle product management and product launches in your startup?

I am interested to understand how startups are treating product development and product management in the early stages - especially moving from prototype to beta release to full commercial release.  Are you following any structured processes or not? If not, would you consider implementing a more structured approach to assist you once your product/service reaches critical mass and many users are asking for new features or bugs that need fixing?
